Sancerre is a large area producing a great deal of wine, and as we continually discover there is huge variety in quality and style available from vintage to vintage, producer to producer.
Because of the richness of flavour found on the plate from the stunning fish to the cheese, and the punchy herb salad, a fuller flavoured wine does an excellent job.

Choosing a Médoc to go with our delicious main course is a good example of the importance we place on tasting dishes and wines. In discussing the menu a few weeks ago, we thought straight away that a Bordeaux wine would fit the bill perfectly and that we should go for something like Merlot-dominated Pomerol or Saint-Émilion as they tend to be softer in character and a bit more approachable than their broader siblings down river.
What we found that with the subtle complexity of the excellent beef, winey sauce, and particularly the peppery watercress suited a similarly weighted but more savoury style found with the Cabernet-dominated wines of the Left Bank. We tasted less of these but they went so much better with the dish.
