Ingredients
115g unsalted butter
85g castor sugar
80g brown sugar
50g whole egg (1 med size egg)
Tea spoon vanilla extract
7g baking powder
3g salt
165g plain flour
23g rolled oats (porridge)
200g chocolate chopped (dark or milk)
100g roasted almond and chopped coarsely
Method
Cream the butter with brown and castor sugar in the bowl with paddle (not a whisk, not a hook). Add the salt and mix it.
Add egg & vanilla extract.
Add the baking powder to the flour. Then add this to the bowl to mix in 2 stages. Then add all the dry ingredients to bind well.
Scoop or spoon cookie mix on to a tray.
Put it in the oven (150’c) for 13 mins or until it gets a golden colour depending on ovens. Cool to room and enjoy.
