Main: Slow-cooked local Essex spring lamb shoulder with pipérade and goat’s cheese ravioli
Dessert: Apple tart Tatin with crème Normande

Sancerre, Domaine Bailly 2018, Loire, France
“Asparagus gets some perhaps unfair billing as difficult to choose wine with, however it’s true the distinctive flavour & texture does point in a particular direction for me, and with the addition of a richly flavoured vinaigrette, the key elements should be acidity and savoury notes.”
“I think Sancerre is a great pick as it’s made from the Sauvignon Blanc grape which has these attributes in spades. The grape is capable of very rich exotic flavours if allowed to ripen further, however in the Loire they tend to pick when ‘just right’ to show off the more subtle, herbaceous side.”
Rioja Crianza 2016, Hacienda Grimon
“Lovely dish here, and I’m very much led by the main flavours of tender aromatic lamb, rich peppers and tangy goats cheese. The key for me is finding wine that’s not too light or heavy, overtly fruitful wines also won’t work so well. Rioja tends to have moderate tannins, good refreshing acidity and mellow fruit which already stand it in good stead, and I particularly like the style of this producer, creating a wine that has deeper darker fruit character from top quality fruit, with a complexity achieved through longer than average barrel aging.”
