In celebration of 20 years of Galvin Restaurants, we’re thrilled to bring back some iconic Galvin dishes each month to mark this milestone occasion. As always, these monthly dishes will honour the seasons, showcasing the finest ingredients and featuring a modern 2025 twist crafted by our talented head chefs.
We invite you to join us – relive a classic, rediscover a favourite, or savour a dish you’ve never tried before For one month only at Galvin La Chapelle, experience a 2025 reinterpretation of a beloved Galvin classic: slow cooked Pyrenees lamb shoulder with piperade and goat’s cheese ravioli.
Celebrated for its delicate flavour and buttery texture, Pyrenees lamb is perfectly complemented by the sweetness and acidity of piperade and creamy goat’s cheese. Executive Chef Arturo Granato adds his signature touch, deconstructing the traditional ravioli to create a crisp, golden parcel perched atop the goat’s cheese for an innovative twist.

This February, at both Galvin Bistrot & Bar and Galvin Green Man, enjoy Boudin Blanc with caramelised apples.
A traditional French white sausage, Boudin Blanc takes centre stage in this elegant dish, served on velvety pomme purée and paired with caramelised apples for a beautifully balanced flavour experience.
